Broccoli White Cheddar Soup



I've posted a Vitamix recipe for broccoli cheddar soup before which is delicious. However, if you have more time (like at least an hour) and want to make soup the old fashioned way this recipe is very good as well.


1 Tbsp butter
1/2 onion, chopped
1/4 cup melted butter or coconut oil
2 Tbsp coconut flour
1 cup Greek yogurt
1 cup coconut milk
2 cups chicken or vegetable broth
1/2 pound fresh broccoli
6 oz grated cheddar cheese (I always use white)
salt & pepper to taste (I like a lot of salt)

Saute the chopped onion in the butter until translucent. Create a roux by mixing in the coconut flour. Add the milk, broth and yogurt, slowly and bring to boil while stirring. Boil for a few minutes, until it starts to thicken slightly. Add broccoli and cook until tender. Turn off heat and add cheese. Stir until melted, then serve.
*Using coconut flour, it may initially seem as though the soup is not going to thicken, however it does so with time. If you make this ahead of time and refrigerate it the soup will be extremely thick when you go to eat it after it's completely cooled and set.
